Emphasis on Simcoe, or as we prefer - em(p)-?fa-s?s ??n ?sim-(?)k? - is an uncomplicated Lactose NEIPA, triple dry-hopped with a blend that is Simcoe-forward. This results in a sweet, hoppy, beer with no bitterness. The play between our house wild yeast and the hops suggest a citrusy candy. Allow us to emphasize Simcoe hops!
